Dairy Free and Grain Free "Cheesy" Rolls

These simple rolls are adapted from Brazilian Cheese Rolls (Pao de Quiejo). They are gooey and delicious served hot!

Ingredients
  • 1 egg
  • ⅓ cup olive oil
  • ⅔ cup almond milk
  • 1½ cups tapioca flour
  • ½ cup guacamole
  • ½ tsp salt
  • Optional seasonings: garlic powder, basil, oregano (1/2 tsp each) - for more pizza-like flavor!
Instructions
  1. Preheat oven to 400 degrees. Grease mini muffin tin with olive oil.
  2. Blend all ingredients in a blender until smooth (may have to stop and scrape the side a couple of times to incorporate all the ingredients.
  3. Fill muffin cups a little more than ¾ full. This makes 12-18 mini muffins, depending on how full you fill the cups.
  4. Bake 15-20 minutes. Rolls will puff up (turn on your oven light to see!). They are ready when they are slightly golden brown.
  5. Serve warm as a snack or side dish. For a more pizza-like effect, dip them in marinara sauce. This recipe doubles well but tastes best right out of the oven or reheated.
